The Pennsylvania Department of Agriculture, 866-366-3723, uses a risk-based inspection reporting process for restaurants and other food handlers.

Alberto’s Cafe Inc., 36-38 E. Gay St., West Chester, follow-up, Dec. 26. Fail. Observed the calamari in the under-grill cooler to be at 55 F as opposed to 41 F or below to help prevent pathogen growth. Calamari discarded by kitchen staff during inspection. Calamari was potentially thawed incorrectly, ensure to go over proper thawing processes with kitchen staff. Observed multiple deli meats stored open without covering in the two-door refrigerator, which can result in potential contamination of the food. Provide covers immediately. Observed raw meats stored above ready-to-eat foods in the walk-in refrigerator which can result in potential cross-contamination. Store foods in order of internal cooking temperature. Observed multiple wet wiping cloths throughout the kitchen not being stored in sanitizer solution. Wet cloths are prone to becoming soiled and contain pathogens. Ensure to utilize sanitizer buckets with wiping cloths inside at kitchen work stations. Observed frozen calamari thawing in standing water at room temperature, which is not an approved thawing method and can result in potential pathogen growth. Bar three-compartment sink being used as a dump sink and for dishwashing. Dishware being washed via sanitizer then rinsing in water as opposed to the correct method. Facility may not use three-compartment sink as a dump sink, designate one of the other hand sinks at the bar as a dump sink. Observed cheesesteak meat and fried onions cooling at room temperature at 100 F-110 F, which can result in potential bacterial growth. Foods discarded by kitchen staff during inspection. Foods must be cooled rapidly uncovered (to allow heat to escape the container) in refrigeration or in an ice bath within 6 hours after cooking from 135 F to 41 F or below. No sign or poster posted at the hand-wash sinks in the bar areas to remind food employees to wash their hands. Install signs/posters immediately to designate hand sinks from dump sinks, etc. Clean and sanitize the interior of the ice machine in the kitchen of any pink biofilm residue near the ice chute to prevent ice from getting contaminated. Clean and sanitize the soda gun nozzles at the main bar of any biofilm to prevent potentially contaminating drinks. Observed multiple ready-to-eat temperature controlled foods (cooked foods, re-wrapped deli meats in the walk-in fridges and two-door fridge) without dark markings to help prevent potential pathogen growth. Clean the following: The food/debris buildup from under the storage racks in the basement walk-in cooler; the mold buildup from the walls/ceiling/hoses above the kegs in the basement walk-in cooler. Observed dishes/utensils in the hand sink at the main bar. Hand sinks need to be free of items and used for handwashing purposes only. Remove items.
Cross Roads ( An Indian Eatery), 615 N Morehall Road, Unit 100, Malvern, follow-up, Dec. 26. Pass. Observed the three-compartment sink set up incorrectly as far as washing procedure. Observed a food employee dicing onions without gloves on which can result in potential contamination of food. Ensure employees understand proper hand-washing and gloving procedures.
Kaanchi Indian Cuisine, 43 N Bailey Road, Thorndale, follow-up, Dec. 26. Pass. No violations.
Villa St. Martha, 490 Manor Ave., Downingtown, follow-up, Dec. 26. Pass. Raw shelled eggs and raw bacon stored above ready-to-eat foods in the one-door cooler. Employee rearranged food items to prevent contamination.
Desi Swaad Inc, 10 Riverside Drive, Spring City, follow-up, Dec. 24. Pass. No sanitizer detected in dishwasher at time of inspection. Do not use dishwasher until given permission from CCHD. Facility will have machine serviced immediately. Contact CCHF when dishwasher is in proper working order and sanitizer is properly detected.
