Quesa Dee’as, 708 Cumberland St. Lebanon, Follow-up, December 5. Pass. The interior of the microwave, the bottom surface of the silverware caddy, a knife, a set of tongs, a spoon and a rubber spatula, all food contact surfaces, were observed to have food residue and were not clean to sight and touch. Food debris on utensils and equipment is an ongoing problem at this facility. Observed a knife with a handle that has deteriorated and can no longer be properly cleaned. Two food items, shrimp and Queso cheese were both dated 11/8 on 12/05/2025. The items were to be discarded. The door between the two prep areas has paint that in very poor condition; it has peeling paint, and it is not clean.
Lebanon Country Club, 3375 Oak St. Lebanon, December 4. Pass. ROP packaged Salmon with a label indicated keep frozen or thaw immediately for use, observed stored in grill draws. Temperature-measuring device for ensuring proper temperature of equipment is not available or readily accessible in outside walk-in freezer equipment. Food facility does not have available chlorine sanitizer test strips (for dishwasher) and Qt Test strips for three-compartment sink are water-damaged. Door Gaskets of catering kitchen two-door reach-in cooler are severely torn and need replaced. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low-temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Corrected. The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 200-400ppm as stated on the manufacturer’s use directions. Corrected. Fan guards in the walk-in catering cooler with accumulation of dust.
Lebanon Valley College Alan Mund College Center, E. Sheridan Ave. Annville, December 3. Pass. Around hood at the grill station with loose hanging caulking and needs repaired. Onion slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. Corrected. Interior lip of ice machine deflector shield with a white accumulation and needs cleaned. Interior bottom of fryers at the grill station with accumulation of grease and food debris. Ceilings in the grill station, pizza station and ice cream station are dusty and need of cleaning. Flooring under fryers at grills station, and in BOH (floor wall junction area and around mixer) with accumulation of grease food debris, dust and dirt.
