Johnny – Joe’s Bar & Dining, 5327 Trindle Road, Mechanicsburg, Nov. 24. Fail. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Large container containing a large bag of flour with excessive rodent droppings, too numerous to count, and a hole in the bag that appears to have been chewed by rodents. An extreme number of rodent droppings, too numerous to count, covering cans and ingredients. The items include, but are not limited to, the following: pineapple juice, salt containers, multiple seasonings containers, beans, bag of flour, corn and cranberry sauce. Observed wiping cloths in extremely unclean condition in buckets in the kitchen. Observed food storge containers directly on the floor in storage area, rather than 6 inches off the floor as required. Chicken wings being held at 45 F in the reach-in cooler rather than 41 F or below as required; discarded on site. Commercially processed, refrigerated, ready-to-eat, time/temperature control for safety food in the bain-marie and reach-in cooler held more than 24 hours and is not being date-marked. Observed five-10 cutting boards with extreme scoring and are no longer easily cleanable. Temperature-measuring device for ensuring proper temperature of equipment is not available in walk-in cooler, reach-in cooler or bain-maries. Thermometers for ensuring proper temperatures of food are not available or readily accessible. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Large mixing bowl with a dead mouse in the bowl and covered flour buildup from previous day’s use. Mixing bowls containing rodent droppings and what appears to be torn napkins inside. Speed rack with sheet pans with grease and rodent droppings. Multiple metal pans containing smallwares with extreme food and buildup not cleaned from previous day’s use on prep tables. Dish rack of silverware with food debris and dust. Cambro covered with what appears to be dirt, dust and flour debris throughout the kitchen. Slicer with old food splashes and rodent droppings. Approximately five-10 cutting boards with what appears to be mold on them. Ice machine deflector plate contains a large amount of clear slimy substance and mold on the edge in contact with ice. Rolling pin with old flour covering it. Pizza pans with grease and mouse droppings. Multiple knives with old food debris. White dough pans covered in dirt and yellow film. All dry storage shelves with visible dust and dirt accumulation. Interior of both bain-maires including gaskets have extreme visible food debris. Interior of the floor of the reach-in freezer has a large amount of food debris. All prep tables including shelves and legs have old food debris in need of deep-cleaning. All walk-in cooler fans have an accumulation of visible dust and debris. Mold was observed on the ceiling of the kitchen walk-in. All dish racks have a visible accumulation of food debris. Interior of the dish machine has buildup of lime and old food debris. Mold on the three-bay sink in the bar area around the faucet. Wet-wiping cloths are not being laundered daily. Trash receptacles throughout the facility are extremely dirty with old food debris outside and inside. The entire facilities floors are need of deep-cleaning including under and around all equipment legs. Repairs are needed behind the bar at both sinks; the floor is extremely damaged. Ceiling tiles in the kitchen need replaced. Walls in the kitchen have spillage and are in need of cleaning. The hand-wash sink in the dish area does not have single-use towels, continuous towels, or air-drying device. No sign or poster posted at the hand-wash sink in the dish area to remind food employees to wash their hands. Food facility inspection indicates evidence of rodent infestation in the kitchen, bar and storage areas, but facility does not have a pest-control program. Potential rodent harborage areas on the exterior of the building perimeter. Extreme amount of debris and equipment outside the back kitchen door. Observed a dead mouse inside the large mixer bowl. The entire facility has unused equipment, tools and old supplies needing removed.
