Refrigerated, ready-to-eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours in the walk-in is not being date-marked. Filters above fryers were observed to have significant grease build up and static dust accumulation.
Asian Cuisine, 3805 Main St., Scotland, Nov. 19. Pass. Food employees observed in kitchen area not wearing proper hair restraints, such as nets, hats, or beard covers. Chicken food observed thawing in standing water in the three-bay sink, which is not an approved thawing method. Multiple trays of chicken food observed thawing at room temperature on the stainless-steel prep table, which is not an approved thawing method. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low-temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required; corrected. Blade of large commercial can opener a food contact surface, was observed to have food residue and was not clean to sight and touch; corrected. Large white deflector plate of the ice machine located in the rear of facility, a food contact surface, was observed to have food residue and was not clean to sight and touch; corrected. Observed stoves, and stainless-steel shelves equipment, in area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Employee personal items vitamins, phones, personal medications and gummies were observed in kitchen prep area and not stored in dressing rooms or identified storage area as required; corrected.
Johnnie’s Family Restaurant, 679 S Main St., Chambersburg, Nov. 19. Fail. Person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Observed empty hand towels in the rear sink area. Numerous food items in the walk-in refrigerator area stored open with no covering. Food ingredient storage containers is not labeled with the common name of the food. Observed wet-wiping cloths not being stored in sanitizer solution. Observed food stored directly on the floor, rather than 6 inches off the floor as required. Food was held at 56 F, in the refrigerator, rather than 41 F or below as required. Food, a potentially hazardous ready-to-eat food requiring date-marking, was not date-marked. Food facility needs sign for three-compartment sink: wash, rinse, sanitize. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Observed loose and broken rubber door gaskets. Exhaust vent in walk-in and bathroom is in need of cleaning. Potential rodent harborage areas inside the food facility observed in the storage area due to dropping. Food facility is in need of cleaning.
Mcalister’s Deli, 541 Gateway Ave., Chambersburg, follow-up, Nov. 19. Pass. Observed deeply scored cutting boards not resurfaced or discarded as required. Exterior door in the rear area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.
