Giuseppe Brother’s Pizza, 301 S. 18th St., Camp Hill, Nov. 18. Fail. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Person in charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Employee observed donning single-use gloves without a prior hand wash; educated and corrected on site. Employee was observed washing their hands at the three-bay sink rather than the designated hand-wash sink; educated and corrected on site. Cigarettes, cigarette butts, ashtray found on a table on the front of the facility three-bay sink area during the inspection. Observed a set of keys with an Eagles key lanyard attached directly on a prep table at the front of the facility three-bay sink area. Multiple male and female food employees, including the owner, observed in the cook/prep areas, not wearing proper hair restraints, such as nets, hats, or beard covers. Some, not all, were corrected on site. A food employee was observed touching a cold sub and a toasted sub with bare hands. Observed a white bucket of “salt” (product was not labeled) stored on a shelf under the slicer in the back area of the facility stored open with no covering; corrected on site. Observed food ingredient storage containers, shakers, bottles, in the entire facility, is not labeled with the common name of the food. Observed wet-wiping cloths at every food station in the entire facility, not being stored in sanitizer solution. Numerous foods (ham/62.1, pepperoni/60.2, sausage/52.1, mushrooms/50.8, tomato sauce/57.4, cheese/60.1) was held in a broken bain-marie cooling unit in the cook area, rather than 41 F or below as required. Discussed with employee and all foods were disposed. Instructed owner and employee that they may not use this piece of equipment to house any foods until it was repaired. Observed a pan of cooked chicken breast and a plastic container of chicken breast stored on a shelf next to the grill. Chicken was temping at 95.5 and 103.3 degrees. Discussed with Owner and product was discarded. Discussed proper way to hot-hold foods. Observed numerous food items (commercially processed and food prepared in the food facility) in the walk-in cooler and the upright two glass door Coca-Cola cooling unit (including, but not limited to, deli meats, cheeses, meatballs, sausage, cut tomatoes, etc.), and being held for more than 24 hours is not dated-marked with the date it was opened or made. Time in lieu of temperature being used in the food facility to control ready-to-eat potentially hazardous foods (pizza) without written procedures or documentation to verify disposition of food. Sponges observed in the front and back three-bay sink areas being used to clean food contact surfaces. A temperature-measuring device for measuring manual warewashing wash and sanitizing water temperatures is not available. Observed the following in the walk-in cooler: Flooring is lifted and in need of repair/replacement. Interior of door is cut open and covered in tape, which is not a cleanable surface. Observed food employee using manual warewashing sink as a hand-washing sink. The water temperature of the wash compartment of the manual warewashing equipment was 104.1 F, rather than not less than 110 F or higher, as required. Food facility is reusing souffle cups, which is intended to be a single-service or single-use article. Observed single-use cups stored in numerous spice containers on a shelf near the walk-in cooler area. Observed the following on food contact surfaces: A dough scraper at the front of the facility three-bay sink area stored between the dirty wall and the top of the sinks edge. Ice scoop stored in a hanger near the ice machine, touching the unclean wall and contaminating scoop. A pink/brown mold-like substance on the crash bar of the ice machine and in need of cleaning. Pink, black and brown moldy slime on the customer self-serve soda dispenser and ice chute. Owner turned off machine and corrected on site. Slicer and floor dough machine with heavy food debris and build-up on both pieces of equipment and in need of deep cleaning. Cardboard is being used to line shelves with pans and to go containers on them near the walk-in cooler area. Magnetic knife holder, on a wall behind the slicer, with heavy accumulation of filth/food debris coming in contact with knives stored on it. Manual can opener with accumulation of filth on the blade and cutting area. A white bucket on a shelf under the slicer with a heavily soiled measuring cup stored inside and no lid to protect product stored. Hamilton Beach microwave stored above an upright freezer near the back of the facility three-bay sink area with heavy food debris inside and out and in need of deep cleaning. Pizza paddle stored directly on top of the dirty pizza oven. A knife with tape on the handle near the substation bain-marie unit. Tape is not a cleanable surface and cannot be used. Nonfood contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed the following on nonfood contact surfaces: Shelving in the walk-in cooler with heavy accumulation of dried food and filth with the possibility to contaminate foods stored. All handles on all coolers, bain-marie cooling units, walk-in cooler, white cupboards (under register area) and oven doors with heavy accumulation of dried food debris and in need of deep cleaning. All shakers and squirt bottles with heavy accumulation of food debris with the possibility to contaminate hands (gloved or ungloved) while in use. Metal shelving, near the walk-in cooler area, with spices, sauces and pans stored, observed with very heavy accumulation of static dust. Shelving is also lined with cardboard, which is not a cleanable surface. Observed sanitizing washed equipment and utensils without a separate water rinse between. Three-bay sink was not set up with wash, rinse and sanitize in all three sinks. Only wash and sanitize. The hand-wash sink in the front of the facility three-bay sink area was blocked by a wire grate, pots and trays stored over the sink opening and not accessible at all times for employee use. Plumbing system not maintained in good repair – observed both three-bay sink faucets leaking at the faucet and handles. Observed floors in the ice machine area is cracked, broken and missing and is not a smooth, easily cleanable surface. Observed cove molding on both sides of the walk-in cooler door are falling off of the wall and in need of replacement. No sign or poster posted at the hand-wash sink in the front of the facility three-bay sink area to remind food employees to wash their hands. Wall behind the three-bay sink area, has numerous holes in the wall and in need of repair. Old, unused equipment stored in facility area, should be removed from food facility. Observed a broken slicer stored dirty on a broken small white chest freezer.
