Aki Japanese Restaurant, 424 Gateway Ave., Chambersburg, Nov. 12. Pass. Observed wet-wiping cloths not being stored in sanitizer solution. Observed loose and broken gaskets on the refrigerator. Observed deeply scored cutting boards not resurfaced or discarded as required. This food facility is dirty, dusty and has sticky surfaces and needs to be cleaned.

Person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Food ingredient storage containers in the walk-in refrigerator, walk-in freezer and refrigerator not labeled with the common name of the food. Can opener in the prep area was not clean. Observed wet-wiping cloths not being stored in sanitizer solution. Food in the refrigerator and walk-in stored open with no covering. Ice scoop not being used to fill up beverage. Food facility is not using available sanitizer test strips or test kit to determine sanitizer concentration. Vent system in the walk-in refrigerator and bathroom needs cleaned. Observed deeply scored cutting boards not resurfaced or discarded as required. Ready-to-eat food in the walk-in freezer, walk-in refrigerator and refrigerator requires date-marking. Loose and broken gasket observed in walk-in need to be replaced. Warewash temperature-measuring device does not work correctly. Paper towel dispenser was empty at the kitchen hand-wash sink. The sanitizer concentration in the sanitizing solution of the three-bay sink was 0 ppm rather than 50-100 ppm as required.
Greencastle Sunoco, 705 Buchannan Trail East, Greencastle, follow-up, Nov. 10. Pass. Side door in the back of the food facility has a gap and does not protect against the entry of insects, rodents, and other animal. The front entrance door of the food facility is not self-closing. Old, unused equipment stored in the pizza area should be removed from food facility. Ceiling tiles missing in the bathroom area and need to be replaced. The ceiling surrounding the ceiling vents of the food facility is extremely dirty, dusty, and in need of cleaning.
