A Season Chef @ WC Growers Farmers Market, 201 N. Church St. West Chester, November 8. Pass. No violations.
Aramark @ Bayard Rustin High School, 1100 Shiloh Rd. West Chester, November 7. Pass. In the display refrigerator near the register, two pudding parfaits prepared on-site observed with sell-by dates of 11/6. These were discarded on-site. Monitor all date marking and ensure TCS foods prepared on-site are used or discarded within seven days. In the walk-in freezer, one side panel is missing from the fan unit. Replace. Maintain the kitchen doors leading into the maintenance department’s workshop/storage area closed. In the mechanical dishmachine room, the exhaust fan is not removing the heat and condensation adequately.
Arby’s, 743 W. Cypress St. Kennett Square, November 7. Pass. Ensure employees with long hair properly restrain it. Staff was asked to pull her hair back or up and complied immediately. Clean interior of soda dispenser cabinet. Employee has a valid Serv Safe certificate but has not applied for a Chester Co. certificate. Paperwork left on site. Apply within 10 days.
Caln Elementary School – Food, 3609 Lincoln Highway, Thorndale, Follow-up, November 7. Pass. No violations.
Casa Herrera, 2755 E. Lincoln Highway, Thorndale, Follow-up, November 7. Pass. The ambient temperature of the Continental bain marie across from the cookline was observed at 43 degrees F which is within the +/- 2F accuracy parameters. The following internal food temperatures were observed: raw shrimp 53 degrees F; cooked shrimp 48-49 degrees F; shredded cheese 46 degrees F; chorizo 49 degrees F; cooked peppers and scallions 47 degrees F. The above-noted foods were discarded during the inspection. All other internal food temperatures of food stored in this unit were observed at 41 degrees F. A service technician is scheduled to visit the facility tomorrow. Make necessary repairs. Do not use this refrigerator to store TCS foods if foods cannot be maintained at 41 degrees F or less. Monitor temperature throughout the day. If internal food temperatures cannot be maintained at 41 degrees F or less discontinue use of this refrigerator. Clean far corner under the mechanical dishwasher- food debris/grime. Maintain in a clean and sanitary condition at all times.
Chick-fil-A, 280 Exton Square Parkway, Exton, November 7. Pass. Produce wash dispenser is not dispensing at proper concentration. Unit was not in use during inspection. Repair/adjust unit. Send proof of correction to the Department. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean and sanitize around nozzles (white area) on shake-based machine. Clean fan covers in the walk-in cooler. Clean floors in dry storage room. Paper towel dispenser empty at the handwash sink in the front area. Paper towels were supplied during inspection.
