New Eastern Restaurant, 5201 Spring Road, Shermans Dale, Oct. 31. Fail. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Food employees observed in kitchen area not wearing proper hair restraints, such as nets, hats, or beard covers. Observed breaded cooked chicken being stored in re-used wax-coated raw chicken boxes; corrected on site. Several foods in the walk-in cooler stored open with no covering. Several raw animal foods were stored above ready-to-eat foods in the walk-in cooler. Observed food ingredient storage containers throughout kitchen area not labeled with the common name of the food. Utensils in multiple food containers observed stored in the food and not with handle above the top of the food and the container; corrected on site. Refrigerated, ready-to-eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours in the walk-in cooler not being date-marked. Observed cardboard being used throughout the facility on floors and shelving; cardboard is not an easily cleanable surface. Three knives on the magnetic knife holder above the prep table had old food debris. Grinder stored on the floor with old food debris. Prep table covered with dirty cardboard. Observed the overall sanitation of the facility is not being maintained on shelving and storage areas. Observed buildup of grease and debris on most surfaces. Observed wok utensils being stored on an unclean surface of the wok area; corrected on site. Old food residue, dishes and utensils observed in the hand-wash sink, indicating uses other than hand-washing. Observed old equipment and empty boxes throughout the facility that need to be removed or discarded.
