Brothers Pizza, 875 Lincoln Way West, Chambersburg, Oct. 31. Pass. Observed raw chicken next to open blocks of cheese on a prep table with no barrier to prevent cross-contamination. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Observed a working container of general cleaner next to the pizza baine-marie not marked with the common name of the chemical.

Cracker Barrel No. 258, 1162 Wayne Ave., Chambersburg, Oct. 30. Pass. Plumbing system not maintained in good repair; observed the faucet leaking at the three-bay sink. Observed the wall next to the large kettle area with broken tiles/missing caulking and in need of repair.
Domino’s Pizza, 1515 Lincoln Way East, Chambersburg, Oct. 30. Pass. Observed a cup being used as a scoop in the cornmeal container without a handle to be stored above the food.
Frank’s Pizza, 1901 E. Main St., Waynesboro, Oct. 30. Pass. Food employees observed in kitchen area not wearing proper hair restraints, such as nets, hats, or beard covers. Blade of large deli slicer food contact surface was observed to have food residue and was not clean to sight and touch; corrected.
La Bendicion Bakery, 501 Cleveland Ave., Chambersburg, Oct. 30. Pass. Facility does not have procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility. Food in the stockroom area stored open with no covering. Food dispensing utensil in food container observed stored in the food and not with handle above the top of the food and the container. Food was held at 45 F in the refrigerator, rather than 41 F or below as required. Refrigerated, ready-to-eat food not date-marked. Observed galvanized metal can used for food storage.

Castellos Restaurant, 15731 N. Pennsylvania Ave., State Line, Oct. 27. Fail. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Food employee did not follow proper hand-washing procedure. Food employee did not wash hands for adequate amount of time of at least 20 seconds. Food employee was observed washing their hands at the dish sink rather than the designated hand-wash sink. Food employee observed eating or tasting food by the meat slicer and microwave. Food employees observed in the cooking line not wearing proper hair restraints, such as nets, hats, or beard covers. Observed raw animal foods were stored above ready-to-eat foods in the two-door cooler by the dish-washing area. Commercially processed, refrigerated, ready-to-eat, time/temperature control for safety food in the glass door cooler by the back door held more than 24 hours is not being marked with the date it was opened.
