Grocery bags are not approved direct contact with meat and poultry products. Facility needs to purchase food-grade plastic bags for product storage. Hand-washing sink was not accessible due to mop bucket blocking it. Also, hand sink was being used to store rubber gloves, which were used for handling cleaning chemicals. Nonfood contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed inner chamber of microwave soiled with old food residue. Nonfood contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Freezer with dumplings has old food residue on the bottom shelf. Nonfood contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed old food debris lying on top of cooking equipment and counter tops. Old food residue was also observed on raw food ingredient bins and containers. Numerous fruit flies were observed in the area of the utility sink. Numerous house flies were observed flying around the food preparation area of the kitchen. Facility does not have a pest control company on contract. Overall condition of kitchen area is messy with old food debris observed on cooking equipment, counter tops, shelving units, under food processing equipment and on the floor. Facility needs to improve its housekeeping and sanitation. Front door was propped open with a fire extinguisher, which may allow pests into the facility. Rear door was propped open with a trash can, which may allow pest into the facility. All doors and windows must be sealed and secure to comply with PA Food Code. Owner corrected these violations by closing doors upon request.

Blaze Pizza, 3741 Capital City Mall Drive, Camp Hill, Oct. 7. Fail. Date-marking processes was confusing, as some items were marked 1/10 and 10/1. Discussed with person in charge to get uniform date-marking techniques to verify products are first in, first out and discarded if expired. Observed cut ham and a container of sauce, a refrigerated, ready-to-eat time/temperature control for safety food, in the walk-in cooler area was not compliant with date-marking by being labeled with a discard or use-by date of no more than seven days and requires discarding. Both products were discarded on site. A temperature-measuring device for measuring manual warewashing wash and sanitizing water temperatures is not available. Person in charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Observed hose from the small wall mounted hot water tank into the middle three-bay sink basin (rinse) contaminating dishes being placed in this sink for rinsing. The water temperature of the wash compartment of the manual warewashing equipment was 101.3 F rather than not less than 110 F, as required. Facility has a certified food employee, but a certified food employee was not available during all hours of operation, as evidenced by an inability to talk with the certified food employee during this inspection. Observed food ingredient storage bottles, in the under-counter cooling units in the front area is not labeled with the common name of the food. Observed black moldlike substance on the back-splash wall of the three-bay sink area and in need of cleaning. Observed ceiling vents with heavy accumulation of static dust and in need of cleaning. The wash solution temperature in the mechanical warewash equipment sanitizing with chemicals was 105.4 F rather than not less than 130 F, as required. Machine was run 15 times and would not go above the 105.4 probe thermometer reading taken at the exhaust water. Discussed with person in charge and explained that the three-bay sink must be used for washing, rinsing and sanitizing of equipment until the dish machine is repaired. Dried food debris on the manual can opener; corrected. Two magnetic wall mounted hangers with dried food debris and coming in contact with the knives and scissors stored on them; corrected. Scoops and spoons being stored in food ingredient containers (both wet inside the walk-in cooler and dry on shelving) and not removed and cleaned every four hours, as required. Observed clean food equipment and/or utensils in back shelving near the three-bay sink area stored wet in a manner that does not allow for draining and/or air-drying (wet-nesting).
JDK Catering Inc., 1 Bishop Place, Camp Hill, Oct. 7. Pass. Nonfood contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil: Observed the two range hoods in the kitchen area with heavy grease, dripping grease and accumulation of static dust and in need of cleaning. Observed flooring and door jam in the walk-in produce cooler in the kitchen area is spongy, lifting and deteriorated and in need of repair/replacement. Plumbing system not maintained in good repair; observed hot water faucet handle leaking at the hand-wash sink near the bulletin board area of the main kitchen and in need of repair/replacement. Observed the exterior load dock door of the walk-in cooler with a gap at the bottom and does not protect against the entry of insects, rodents, and other animals.

Waste is not being removed from the food facility at an appropriate frequency as evidenced by two large full trash receptacles not removed and emptied from the night before. Observed numerous bottles of spray paint and a tube of caulk on food prep tables in the kitchen area; corrected. Some, not all, foods in the walk-in cooler area stored open with no covering; repeat violation; corrected.
