Cumberland Valley Antique Engine & Machinery Assn, 1501 Criders Church Road, Chambersburg, Aug. 8. Pass. The commercial can opener had food residue and was not clean to sight and touch. Customer self-service single-use tableware is not displayed in a manner so that only the handles are touched by customers.
Ice Cream Station, 105 Lincoln Way West, Chambersburg, Aug. 8. Pass. Observed wet-wiping cloths not being stored in sanitizer solution. Ice machine interior bin was observed to have residue/buildup and was not clean to sight and touch.

The Orchards Restaurant, 1580 Orchard Drive, Chambersburg, Aug. 7. Pass. Food ingredient storage containers in the walk-in refrigerator not labeled with the common name of the food. Utensils or equipment such as knives being used in contact with food without being properly cleaned and sanitized prior to use. Observed wet-wiping cloths in not being stored in sanitizer solution. Food stored in the walk-in refrigerator not date-marked. Observed galvanized metal utensils or equipment in contact with pineapple juice, which is an acidic food. Employee is not using available sanitizer test strips or test kit to determine sanitizer concentration, and test strips were outdated. The chlorine concentration in the dish machine was 0 ppm, rather than 50-100 ppm as required. Observed deeply scored cutting boards not resurfaced or discarded as required. Ice machine interior had residue buildup and was not clean to sigh or touch. Vent system in the walk-in refrigerator, bathroom, dining room and hood systems needs to be cleaned.

Quincy Community Ox Roast Association Inc., 8098 Anthony Highway, Quincy, Aug. 6. Pass. Observed the hood range with peeling paint above the griddles, a potential source of contamination to food being prepared.
Caretti’s Pizza, 2625 N. Philadelphia Ave., Chambersburg, Aug. 5. Fail. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Two open employee’s beverage containers were observed on the deli slicer and on a baine-marie. Employees in the kitchen were not wearing proper hair restraints, such as nets, hats or beard covers. Refrigerated, ready-to-eat, time/temperature control for safety prepared in the food facility and held for more than 24 hours in the walk-in cooler is not being date-marked. Time in lieu of temperature being used for potentially hazardous foods (pizza at counter) without written procedures or documentation to verify disposition of food. Ceiling of microwaves had food residue and were not clean to sight and touch. Nonfood contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed the fan guards and ceiling of the walk-in cooler to have a buildup of dirt/dust and in need of cleaning. Observed clutter of old, unused equipment and miscellaneous things that should be removed from food facility; this does not allow for the facilitation of proper cleaning. Observed floors under equipment and the dough prep area has a buildup of dirt, dust and food debris and is in need of cleaning. A working container of gear lube (nonfood grade) was stored above food, equipment and/or single-service articles in the dough prep area. Lubricants being used on commercial mixer equipment are not approved for use on food equipment.
Checko’s Restaurant, 46 S. Main St., Chambersburg, follow-up, Aug. 5. Pass. Observed kitchen floor with an absorbent material being used on floor and hole in floor needs replaced.
