Chick-fil-A, 211 Eagleview Blvd. Exton, August 1. Fail. Kitchen Ice Machine: The scoop found stored between the ice machine and another unit-exposed. Provide an approved closed holder for either the inside or outside the machine. Correct within 7 days. In the meantime, store the scoop inside the bin with the handle up. Breading Machine #1 will not work-it keeps tripping the electric breaker. Time in lieu of temperature was being used to control Time/Temperature Controlled for Safety (TCS) foods without documentation to verify disposition of food and when consumed or discarded. Correct today and comply every day until the unit is working again. Another option would be to stop using the unit. Repair the electrical problem so the #1 Breading Machine can function. Correct within 7 days. Remove all cardboard from the floor and clean the floor inside the walk-in freezer. Correct within 7 days. Plumbing system not maintained in good repair: Repair the leaking drain under the dishwasher; Provide a hot water faucet handle to the set of faucets on the right. Correct the above within 7 days.

Hissho Sushi @ Giant 6116, 1393 Dilworthtown Crossing, West Chester, August 1. Fail. One package of raw tuna observed thawing in reduced oxygen or vacuum packaging. These packages must be opened to allow oxygen to enter prior to beginning the thawing process. Discard tuna and follow approved thawing procedures. Clean countertop of steel island and organize boxes/items. Label all spray bottles with the common name of the chemical within. There is no Chester County Certified Food Manager (CFM) as required. A full-time employee must complete a CCHD-approved food safety course, complete CCHD CFM application process and post CCHD CFM certificate in public view. Note: Employee has a ServSafe.
