Texas Roadhouse, 1101 Lower Allen Dr. Camp Hill, Regular/Complaint, June 27. Pass. Observed numerous food ingredient storage containers, shakers, bottles, in the kitchen area, is not labeled with the common name of the food. Observed two metal wire wall racks (containing spices, ketchup, sauces, etc.) is peeling and rusted and in need of replacement. Observed clean plates on the cook line area, stored uncovered or not inverted. Discussed with Management and corrected on site. Observed hand-wash sink at the three bay sink area has no hot water. Only cold water is dispensing from the faucet. Discussed with Manager, plumber was contacted and out of order sign was placed. There are multiple hand-wash sinks through-out the back kitchen area to be used util unit is repaired. Corrected on site. The hand-wash sink on the front prep/cook line is being used as a food preparation sink as evidenced by observed grease and food particles in the sink. Discussed with Management and corrected on site.

Yankee Doodle Family Restaurant, 806 N. Front St. Wormleysburg, June 27. Pass. Observed raw eggs stored over Ready-To-Eat foods in two separate cooling units (baine marie and two door upright cooling unit). Educated employee and corrected on site. Observed numerous food ingredient storage containers, bottles, shakers, in the front and back of the facility, is not labeled with the common name of the food. Food utensils in cook line area observed stored in a container of water which is not maintained at 135°F. Discussed and educated employee and corrected on site. Observed numerous food items (commercially processed and food prepared in the food facility) in the walk-in cooler and upright cooling units, and being held for more than 24 hours, is not dated marked with the date it was opened or made. Educated employee and corrected on site. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in all refrigerated and freezer equipment. Observed gauge on the mechanical ware-washing machine is not working properly. Temped water with probe and it read 128.5F while gauge was only reading 110.0F. Gauge is in need of repair or replacement. Loose/deteriorated rubber door gaskets observed on the “fresh Food” glass two door upright cooling unit and in need of replacement. Observed ceiling tiles in the entire kitchen area peeling/chipping paint and in need of repair or replacement.

El Ola Halal, 3750 Market St. Camp Hill, June 26. Pass. The light intensity in the food preparation area is not at least 50 foot candles. Light above three bay sink is not operational. Ceiling tiles missing in the customer meat service area, and need replaced. Old unused equipment stored in meat customer service area, should be removed from food facility. Observed air conditioning unit in the back dry stock area with excessive dripping into buckets and in need of repair.

Jo Jo’s Pizza, 2210 Aspen Dr. Mechanicsburg, June 26. Pass. The hot water used for sanitizing in the mechanical warewashing machine did not reach 180°F (or 165°F for stationary rack). Corrected on site. Observed dirty containers stacked together with clean ones on rack in back prep area. Corrected on site. Wall in the basement area near the bottom of the stairwell, has a hole, or is broken and in need of repair.

Taco Bell #024415, 655 12th St. Lemoyne, June 26. Pass. No violations.

West Shore Diner, 1011 State St. Lemoyne, June 26. Fail. Observed foods (butter, cheese, pancake mix, sausage, onions, etc.) stored in the Beverage Air Baine Marie (50 to 58F) rather than 41°F or below as required. Owner removed all food and disposed. Observed clean food utensils (spoons, steak knives, etc.) stored in three storage containers at the cook line area, stored uncovered or not inverted. Observed clean food utensils (forks, knives, spoons) stored in the dish machine basket not inverted, but used for consumer use. Observed numerous food items (commercially processed and food prepared in the food facility) in the walk-in cooler in basement area and glass two door refrigeration unit in the kitchen area, and being held for more than 24 hours, is not dated marked with the date it was opened or made. The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Loose rubber door gaskets observed on the walk-in cooling unit in basement area. Door is not closing properly due to lack of working latch and handle. Observed numerous foods (sausage, potatoes, bacon, etc.) in the glass two door upright refrigeration unit in the kitchen area stored open with no covering. Discussed with Owner and corrected on site. Observed raw hamburger stored directly over cooked, uncovered potatoes in the the glass two door upright refrigeration unit in the kitchen area. Discussed with owner and corrected on site. Plumbing system not maintained in good repair – observed ice machine leaking in the basement area causing mold and mildew. Food dispensing utensil in salt and sugar food observed stored in the food with a no handled bowls coming in contact with food stored. Discussed and corrected on site. Old unused equipment stored in the basement area, should be removed from food facility. Accumulation of equipment, boxes, tools, broken doors, and just stuff stored in the basement area. Observed the following on food contact surfaces: Three containers of utensils (spoons, knives, etc.) at the cook line with food debris on the interior coming in contact with utensils stored. Ten (10) knives stored between the dirty table and broken warming unit on the cook line. Corrected on site. In use utensils are not being cleaned daily or every four hours as required. Observed bowls stored in sugar and salt containers, a scoop stored in flour, grill meat presses, etc. not cleaned from the night before. Food facility does not have enough outside waste receptacles as evidenced by refuse and waste lying on the ground. Heavy accumulation of boxes, plastic containers, food, equipment stored directly outside of the rear exit door. Observed “broken” van filled with debris stored directly next to the building. All areas to the exterior of the building need cleaned up, including large growth of vegetation/weeds. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed the following on non-food contact surfaces: Hood, lights, stainless back splash, etc. around the cook area with heavy grease (with the possibility to drip onto foods prepared below) and food splatter and in need of a deep clean. Door slides on the four door stainless storage cabinet at the cook line with heavy food accumulation on the slides and in need of cleaning. Interior of Beverage Air Baine Marie cooling unit with accumulation of food debris on the interior and gaskets and in need of cleaning. Observed cob webs on the basement ceiling directly over food contact items such as ice machine and to go containers, napkins, etc. Observed cob webs and deteriorating metal in the walk-in cooler in the basement area with the possibility to contaminate foods stored. All equipment in the kitchen area is in need of a deep clean with accumulation of food debris on the slides, doors, gaskets, etc. Entire kitchen area and basement is full of clutter and in need of organization. Wood trim behind the counter area is deteriorated and crumbling and no longer cleanable. All stainless behind the counter area with accumulation of food debris and is in need of cleaning. White wall is being held together with tape is no longer cleanable and in need of repair. Perimeter walls and roof of the food facility does not protect from weather and entry of insects, rodents, and other animals. Observed soffit separated from roof, large cracks and holes in the building with vegetation/weeds growing inside the facility. Rodent and insect harborage is possible. Basement area with accumulation of clutter with the possibility to harbor rodents and insects. Observed the exterior and interior of the facility is in major dis-repair and is falling apart with visible growth of vegetation/weeds coming from the exterior into the interior of the diner. Observed wooden ceiling is broken and deteriorated and falling down with large gaps in the entire kitchen area, and in of need replacement. Accumulation of black flies in the kitchen and front serving area of the facility.

Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the Walk-in cooler, is not being date marked. Observed wet wiping cloths in Kitchen area, not being stored in sanitizer solution. Observed raw hamburger being stored above RTE food in the walk-in cooler. Observed Cooking Oil stored directly on the floor in Back Storage area, rather than 6 inches off of the floor as required.

Cedar Cliff Pizza, 1055 Carlisle Rd. Camp Hill, June 24. Pass. Observed large floor fan, on the floor near the doorway to the front and back food areas, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Several food items (bacon, chicken wings, cheese, chicken fingers, etc.) in the upright refrigeration and freezing units in the front area stored open with no covering. Discussed with owner and corrected on site. Observed some, not all, food ingredient storage containers, bottles, and shakers, in the front cook/prpe area, is not labeled with the common name of the food. Observed several deeply scored cutting boards not resurfaced or discarded as required. Corrected on site. Observed single-service, single-use articles stored in dry stock storage shed area directly on the floor, and not 6 inches above the floor. Observed single-service, single-use articles stored in front serving area and back cook area which were not in the original protective package or inverted. Double doors, located in the dry storage shed area of the food facility is being propped open. Trash receptacles within the food facility that are not in immediate use are not covered properly. Observed an accumulation of black flies at the uncovered trash cans. Trash is not being emptied nightly. Observed an accumulation of old and dirty equipment (two shop vaccuums, trash, debris, power tool, a white tub, etc.) stored directly outside of the rear exit and is in need of removal and cleaning.

CVS #01622, 1200 W. Market St. Stop West Shore Lemoyne, June 24. Pass. Paper towel dispenser empty at the handwash sinks in the both mens and ladies room areas. Discussed with management and corrected on site. No sign or poster posted at the handwash sink in the mens room area to remind food employees to wash their hands. Discussed with management and corrected on site. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed back dry stock area with heavy accumulation of trash, packaging, etc. in the entire stock room and in need of cleaning. Waste not being removed from the facility at an appropriate frequency as evidenced by full and overflowing waste receptacles not being emptied daily. Discussed with management and corrected on site. Plumbing system not maintained in good repair – observed faucet leaking at the ladies room. Observed a slow draining sink in the ladies room. Mops are not being hung to air dry. Observed floor tile broken and missing a piece in the womens room area and is not a smooth, easily cleanable surface.

Shippensburg Commons – Druk Grocery Llc, 300 Fayette St. Shippensburg, June 24. Pass. The exit door located in the back Storage area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.

Hampden Twp Pool Snack Bar, 230 S. Sporting Hill Rd. Mechanicsburg, June 23. Pass. No violations.

Hellenic Kouzina Greek Cafe, mobile food facility Type 4, 400 Cheryl Ave. Mechanicsburg, June 23. Pass. Observed an accumulation of static dust on the air conditioning unit directly above the food preparation area and is in need of cleaning to prevent potential contamination of food.

Little Caesars Pizza, 4955 Carlisle Pike Mechanicsburg, June 23. Pass. Observed dough mixer, in back of the facility, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Observed a container in the dish area with a large number of utensils not clean to sight or touch. Corrected on site. Drain at the 3 bay sink has build up of old food debris.

Mechanicsburg Borough – Mechanicsburg Swimming Pool, 1 E. Memorial Park Dr. Mechanicsburg, June 23. Pass. The food facility does not have the original certificate for the certified food employee posted in public view.

Royal Chocolate, 5204 Simpson Ferry Rd. Mechanicsburg, Opening, June 23. Fail. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Cleaning agents / sanitizers used to clean / sanitize equipment and utensils are not available for use during all hours of operation. Food Employee is not using available sanitizer test strips or test kit to determine sanitizer concentration. *The following food contact surfaces, were observed to have food residue and were not clean to sight and touch. – Frozen drink machine – Waffle maker In addition to the above mentioned what appears to be construction dust is covering all food contact surfaces and equipment. The food facility does not have the original certificate for the certified food employee posted in public view. Women’s toilet room is not provided with a covered waste receptacle for sanitary napkins. The exit door located in the back of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. Soap was not available at the handwash sink in the bathroom area. The handwash sink in the bathroom area does not have single use towels, continuous towels, or air drying device. No sign or poster posted at the handwash sink in the bathroom to remind food employees to wash their hands.
