The Pennsylvania Department of Agriculture, 866-366-3723, uses a risk-based inspection reporting process for restaurants and other food handlers.

Ada’s Bakery Llc, 255 Grant Street Chambersburg, June 20. Pass. Food in the refrigerator stored open with no covering. Observed wet wiping cloths not being stored in sanitizer solution. Can opener not cleaned and does not allow for cleaning. The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required. Food Employee is not using available sanitizer test strips or test kit to determine sanitizer concentration, test strips outdated.

Veroni Cafe, 1 N. Main Street Chambersburg, June 19. Fail. Observed food under dirty vent ducts and hoods need clean. Food, a potentially hazardous ready to eat food requiring datemarking, in the prep refrigerator & walk-in refrigerator, was not date marked. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food in the walk-in refrigerator stored open with no covering. Food was held at 100°F, in the steam table, rather than 135°F or above as required. Observed can opener was dirty and needs blade changed. Observed wet wiping cloths not being stored in sanitizer solution. Food ingredient storage containers, in the prep refrigerator and walk-in refrigerator, is not labeled with the common name of the food. Loose or broken door hinges observed. Ice machine interior bin, a food contact surface, was observed to have residue and was not clean to sight and touch. Soap was not available at the handwash sink. Soap dispenser was not working. Observed food stored directly on the floor in walk-in refrigerator, rather than 6 inches off of the floor as required. No sign or poster posted at the handwash sink, to remind food employees to wash their hands. Observed deeply scored cutting boards not resurfaced or discarded as required. Observed toxic material not clearly labeled with a manufacturer’s label. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Shelves in all prep area and under steam table needs cleaned. Vent system in the walk-in and bathrooms are in need of cleaning.

Food ingredient storage containers, in the walk-in refrigerator, is not labeled with the common name of the food. Paper towel dispenser was not working. Food facility is in need of cleaning, behind cooks area and table shelves. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Test strips were outdated. Food dispensing utensil observed stored in the food and not with handle above the top of the food and the container. The handwash sink located in the cooks area does not have water at a temperature of at least 85°F. Vent systems in the kitchen, dinning room and dishwasher area is extremely dirty.
