China One Keystone Arms, 1075 Harrisburg Pike Ste 108 Carlisle, June 18. Fail. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk in, is not being date marked. Observed breaded chicken cooling at room temperature on the wok, which is not a proper cooling method. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed the drain at the 3-bay sink with a large amount of build up around and inside the drain including the area around the floor. Observed food ingredient storage containers, throughout the facility, are not labeled with the common name of the food. Observed single use cups being stored in food containers and not with handle above the top of the food and the container. Corrected on site. Observed the following food contact items not clean to site or touch: – Four Knives – Can opener.

Fairfield Inn & Suites Harrisburg West/Mechanicsburg, 503 Winding Creek Blvd. Mechanicsburg, June 17. Pass. Sponges observed in the dish area being used to clean food contact surfaces.

Hardee’s Of Carlisle, 1804 W. Trindle Rd Carlisle, June 17. Pass. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed old food residue on the top shelf of the food prep station in the main food prep area. Observed the following repairs that need addressed: – Cracked ceiling light shield adjacent to a food prep table in the side food prep area. – Silicone seal around the three-bay sink observed missing/damaged as well as having a build-up of a black mold/mildew-like substance. The following areas of the food facility are dirty, dusty or otherwise in need of cleaning: – Ceiling vents throughout the facility observed with static dust build-up – Black, mold-like substance observed on the condenser fan unit on the interior of the walk-in cooler as well as the bottom door of the walk-n freezer door – Silicone seal around the three-bay sink observed to have a black mold/mildew-like substance – Walls in the dish area observed to be soiled – Floor drain underneath the three-bay sink observed have a build-up of a black mold-like substance – Area around the water heater adjacent to the back door observed to have trash/unused equipment on the ground surrounding the unit as well as an accumulation of dust and dirt.

Kritunga Indian Cuisine, 4920 Carlisle Pike C01 Mechanicsburg, June 17. Pass. Observed clean equipment, linens stored in dry storage areas directly on the floor, and not 6 inches above the floor. Corrected on site. Observed the following food contact pieces of equipment not clean to sight and touch: – bowl and lid of food processor – 5 knives – vegetable dicer Corrected on site. Food employee observed storing clean food equipment while wet and not allowing time for draining and/or air-drying. Corrected on site.

Charleys Philly Steaks, (@Walmart), 6520 Carlisle Pike Ste 550 Mechanicsburg, June 16. Fail. The Food Facility Operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. Food employees observed preparing food in the kitchen, not wearing proper hair restraints or a beard covers. Employee did put on hair restraint. Beard net not available at time of inspection. Observed the Floor drain and floor at the 3 bay sink has a large amount of black mold and food debris build up. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed the following food contact surfaces not clean to sight or touch: – several knives – tomato slicer – multiple utensils. Observed a large amount of static dust on overhead vents in the kitchen in need of cleaning. Paper towel dispenser empty at the handwash sink in the kitchen area. Employee provided napkins for hand drying at time of inspection. Mops are not being hung to air dry.

Metro Diner, 5600 Carlisle Pike Mechanicsburg, June 16. Pass. Observed deeply scored cutting boards not resurfaced or discarded as required. Old food residue, dishes and utensils observed in the handwash sink, indicating uses other than handwashing. Corrected on site. Observed the following: – Interior of the bain marie near the window needs deep cleaned. – underside of large mixer has old food debris in need of cleaning.
