Senior Care On Market, 914 W. Market St. York, Complaint, May 29. Pass. Employee observed serving ready to eat food without gloves. Floor areas must be clean and maintained at all times including behind appliances/equipment etc. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 00 ppm, and not 50-100 ppm as required. Facility was using the wrong sanitizer for dish machine. Corrected. Facility replaced with a chlorine based sanitizer. An open employee’s beverage container was observed on food prep table, a food preparation area. Corrected.

Mac Factory @ Franklin St. Social, 214 N. Franklin St. Red Lion, May 27. Pass. Tomato soup was held at 123.4 degrees F, cooked chicken was held at 118.2 degrees F rather than 135 degrees F or above as required. Corrected. Non-food contact surfaces to include: shelves of cold hold unit. inside pans of cold hold unit, wall behind prep station, wall behind oven- not cleaned at a frequency to preclude accumulation of dirt and soil. Multiple food pans, a food contact surface, were observed to have old label residue and were not clean to sight and touch. Corrected. Contents of hot hold bar: cooked chicken, brisket, tomato soup and other foods, which was cooled, was not reheated to 165 degrees F within two hours, for hot holding. Facility was placing cold product in warming unit to reheat. Corrected. Facility will heat foods to 165 degrees F before placing food in warming unit. Observed clean food equipment stored wet in a manner that does not allow for draining and/or air drying (wet nesting).
