Observed food storage pans stored on shelving in the restroom. Observed dried dripping from meat on the cove molding and wall in walk in where meat is being stored. Old unused equipment stored in dish area, should be removed from food facility. Mops are not being hung to air dry. Corrected on site.

Nagoya Japanese Restaurant, 829 State St Ste 1002 Lemoyne, Follow-up, May 29. Pass. No violations.

Quality Gas & Food Mart, 101 Bridge St New Cumberland, May 29. Fail. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (18 pre-made previously frozen sandwiches), located in the small cold hold counter cooler, and held more than 24 hours, is not being marked with the date it was opened. Discussed with PIC that there was no knowledge of how long the sandwiches were pulled from the freezer and placed in the cooling unit. Corrected on site. Warewashing sink does not have basins large enough to accommodate the largest piece of equipment needing manual warewashing. Slushie machines and coffee urns are too large for small sink basins. A temperature measuring device for measuring manual warewashing wash and sanitizing water temperatures is not available. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Food facility does not employ a certified food employee as required. No Food Handlers Manager or Employee Certification is available or displayed. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. The water temperature of the wash compartment of the manual warewashing equipment was 108°F, rather than not less than 110°F, as required. Cleaning agents and sanitizers used to clean and sanitize equipment and utensils are not available for use during all hours of operation. Observed no soap or sanitizer to properly wash, rinse and sanitize equipment. The food facility does not have a handwash sink located in the food prep/warewashing area. Observed the interior spouts of the slushie machines with heavy accumulation of sticky and built up residue. Employee confirmed that slushie machines have not been cleaned for at least a month. No sign or poster posted at the handwash sink in the three bay sink area to remind food employees to wash their hands. There is no single handwash sink installed. Observed interior upper and back areas of the Impecca microwave oven with heavy food accumulation and in need of cleaning. Old unused equipment (hot dog roller) stored in customer self serve area, should be removed from food facility. Paper towel dispenser empty at the handwash sink in the three bay sink area being used as a hand-wash sink. Unwrapped and unprotected single use straws stored in the customer area. Corrected on site.

Discussed with Owner and corrected. Observed several pieces of plastic equipment which were broken, chipped, missing handles, located in kitchen area, are not in good repair or condition. Discussed with Owner and corrected on site. Magnetic knife holder, a food contact surface, was observed to have a sticky food residue and was not clean to sight and touch. Corrected on site.

Bonefish Grill, 3505 Gettysburg Rd. Camp Hill, May 27. Pass. Observed some, not all, dry food ingredient storage containers, in the kitchen area, is not labeled with the common name of the food. Corrected on site. Observed four (4) grill presses on the grill located in kitchen area, are not in good repair or condition. Handles were completely missing. Discussed with management and presses were discarded. Observed ice machine with a black mold-like substance on the interior ice dispensing housing. Discussed with management and corrected on site.

Chalit’s Thai Bistro, 5517 Carlisle Pike Ste A Mechanicsburg, May 27. Pass. Observed food ingredient storage containers, in the kitchen, not labeled with the common name of the food. Observed a mandolin and several vegetable peelers with dried food debris that were not clean to sight and touch. Corrected on site. Observed large amount of grease and food debris under the cooking line and ice machine. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in, is not being date marked. Cardboard is being used on shelves storing utensils, linens and other food contact equipment that is not clean to site or touch.

Denny’s Restaurant #9564, 5505 Carlisle Pike Mechanicsburg, May 27. Pass. Observed the following items needing detail cleaned: -Refrigeration equipment, on the cooking line, with an accumulation of grease and food residue, on non-food contact surfaces. – gaskets on the cooking line refrigeration with debris and mold. – Shelf under the hand sink on the cooking line has old food debris. Observed the following items: – several thermometers with dried food residue stored in an unclean storage container – multiple vegetable peelers, mandolin and wisk with food debris. – storage racks/dish racks and bread racks have a large amount of grease and debris build up. Observed food debris and spillage on the wall and cove molding, at the end of the cooking line, in need of cleaning.

Dollar Tree #945, 1200 Market St. Lemoyne, May 27. Pass. No violations.

Jade Cafe, 328 East Penn Drive Enola, May 27. Pass. Observed a pint container being used as a scoop in the white rice cooker. Facility must use scoops with handles above the food items and not touching the food. Manager corrected violation by removing container and using scoop instead. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Microwave was soiled with old food residue which was dried and more than a day old. Manager commissioned staff to clean microwave’s interior to correct this violation. Observed old food residue on the outside of equipment and counter tops. Facility needs to improve its cleaning and housekeeping programs. Outside area at rear of facility has an accumulation of old equipment that needs to be removed. Cigarette butts on ground need to be cleaned up with a trash cans placed outside for cigarette butts. Rear external door has a screen door that has air gaps at bottom threshold plate and along door jam that may allow pests especially flies into the food prep area. Screen door needs weather stripping to prevent entrance of pests.

La Maison Tacos, mobile food facility Type 4, 1100 Simpson St. Mechanicsburg, May 27. Pass. Food employees observed in cooking area, not wearing proper hair restraints, such as beard covers.

Longhorn Steakhouse 5294, 6416 Carlisle Pike Ste 100 Mechanicsburg, May 27. Fail. Observed the following on food contact surfaces: – Long plates used for appetizers stored on shelf in desserts area with accumulation of food residue/debris. Corrected on site. – Plates/bowls in cooking area with accumulation of food residue/debris. Corrected on site. – Underside of handles for Traulsen freezer with accumulation of old, dried food residue and need cleaning. – Shelving in cooking area with accumulation of old food debris. – 4 Menumaster microwaves in cooking area with accumulation of food debris on interior surfaces. – Refrigerated drawers storing food items in cooking area with accumulation of food debris – Underside of shelf storing plates in cooking area above table where food is ready to be served with accumulation of dust/food debris. – Interior surfaces of ice machine with accumulation of dirt/biofilm and needs cleaning. – Two soda guns in bar/expo area with accumulation of dirt/grime on nozzles and inside rubber holders. Corrected on site. Observed large accumulation of grease/debris on nonfood contact surfaces on equipment in cooking area. Observed the following on nonfood contact surfaces: – Floor drain in warewashing area with accumulation of dirt/grime. – Static dust accumulation on underside of shelf storing plates in cooking area.
