A temperature measuring device for measuring manual warewashing wash water temperatures is not available. Corrected on site. Food Employee is not using available sanitizer test strips or test kit to determine sanitizer concentration. Observed sanitizer bucket reading 50 ppm and was not changed every four hours, as required. Observed the cooking stone inside of the Bullet Turbo Chef is broken and in need of replacement. The water temperature of the wash compartment of the manual warewashing equipment was 91°F, rather than not less than 110°F, as required. Discussed with Lead and sink was emptied. Mops are not being hung to air dry. Observed mop stored in top of mop bucket.
