Educated operator on proper cleaning techniques/products and corrected on-site. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration at the three-bay sink in the main food prep area. Observed a black mold-like substance on the interior crash bar and wall of the ice machine in the banquet area. Suggested regularly scheduled cleaning/maintenance cycles and/or not running the unit when banquet area is not in use. Corrected on-site.
