Goodie’s, 6 N Market St. Duncannon, May 14. Pass. Observed a kitchen knife handle repaired with adhesive tape in the main food prep area. Operator discarded knife and corrected on-site. Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the refrigerator in the rear food prep area and held more than 24 hours, is not being marked with the date it was opened. Observed two packages of open ham without proper datemarking. Operator corrected on-site. Sponges observed in the dish washing area being used to clean food contact surfaces. Coached operator on proper cleaning protocols and corrected on-site. Ceiling tiles missing in the main food prep area and need replaced.
