Observed the following: – Build-up of grease on the hood ventilation unit in the food prep area – White, mold-like substance on the interior fan housing in the walk-in cooler. Observed bowls of noodles being stored in the lower portion of the bain-marie unit in the food prep area without a proper covering. Discussed with operator and corrected on-site. Observed a wet mop not in use not hung to air dry in the food prep area. Corrected on-site. Refrigerated ready to eat, time/temperature control for safety foods prepared in the food facility and held for more than 24 hours are not being date marked as required. Observed containers of food without proper date marking in the walk-in cooler. Discussed with operator and corrected on-site.

Olive Garden #1471, 6520 Carlisle Pike Mechanicsburg, May 13. Fail. Observed clean food equipment being stored while wet and not allowing time for draining and/or air-drying. Corrected on site. Observed damage to the interior door of the microwave from arching and peeling of material on the inside right-side needing replaced or repaired. Observed deeply scored cutting boards not resurfaced or discarded as required. Corrected on site. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed Mops are not being hung to air dry. Mop was being stored in mop bucket with standing water. Observed the following: – All refrigeration units, throughout the facility, with organic build up in need of deep cleaning of interior and exterior. – Accumulation of grease and static dust above the fryer. – Deep cleaning of the sink at service area in dining room is needed. – Shelving throughout the facility in food prep areas have old food debris need cleaned and personal items removed. – Exterior of the fryer has large amount of grease build up in need of deep cleaning. – Highchairs in dining area need cleaned daily. – All booths have old food debris on ledges and interior. Observed the following food contact surfaces not clean to sight and touch – Several ladles in dish area. – Hotel pans under service counter in BOH. – Clean plates stored in a dirty refrigeration unit. – Blenders in bar area with debris and standing water. – Multiple juice bottles at the bar. – Clean food contact items stored in Dirty storage containers. Observed food ingredient storage containers, in the kitchen area, are not labeled with the common name of the food. Observed the following: -Floors through the entire kitchen including the bar and service areas have buildup of grease, food debris, trash and standing water. – Carpet in dining area needs cleaned. – Molding in dining area at host stand needs repaired. – Floor drains through the entire facility have organic build up. – Slop sink area had build-up of organic material. – Metal molding at the slop sink area need repaired. Observed the following: – Grease and static dust accumulation in vents in the kitchen area. – Static dust accumulation in vents in dining area. Observed a large amount of drain flies in multiple areas of the facility including but not limited to the dining area outside each kitchen door, FOH server prep area, Bar area, and server area at expo station. Single use items being stored in bar area on shelving and in drawers with mixed items or not protected. Observed large amount of standing water under the sink in the bar area.

Subway #24101, 1104 Carlisle Rd. Camp Hill, May 13. Pass. Seam between the two under counter cooling units is tape together with black tape, which is not a cleanable surface. Discussed and educated Assistant Manager and tape was removed.

Bar B Q Tavern, 1243 Harrisburg Pike Carlisle, May 12. Fail. observed the following food contact surfaces: – Kitchen sink had debris and build up in both bays. – Cutting board had food debris from previous days use. – Bus tub under the bar sink has dirty dishes and water with slimy film looking substance on the surface of the water. -Soda dispenser and holder have a large amount of old liquid residue build up on it. -Can opener has debris on the blade -Pizza oven has build-up and broken handle. Observed food ingredient storage containers, in the kitchen area, are not labeled with the common name of the food. Observed rodent bait stored on a cabinet with food contact equipment (scoops) in dry storage area. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The handwash sink in the kitchen area does not have single use towels, continuous towels, or air drying device. -Observed mold like substance on the cooler, behind the bar, to the left of the 3-bay sink. -Cabinets in the kitchen need repainted the are no longer easily cleanable. -Shelves at the pizza oven need replaced contact paper peeling and is no longer an easily cleanable surface. Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the kitchen reach-in, held more than 24 hours, is not being marked with the date it was opened. Food facility inspection indicates evidence of rodents/insect activity in the dry storage areas. Observed 20-30 rodent droppings on the filing cabinet shelf. -Observed damage to the floor in the bar area in need of repair under the cooler to the left of the 3-bay sink. -Observed floors throughout the facility in need of cleaning debris build up under all equipment in bar and kitchen areas. No sign or poster posted at the handwash sink in the kitchen area to remind food employees to wash their hands.

Courtyard By Marriott, 4921 Gettysburg Rd. Mechanicsburg, May 12. Pass. Soap was not available at the hand washing stations in the main food prep area and the service bar area. Corrected on-site. Observed containers of cheese and lunchmeat without proper datemarking in the upright refrigerated unit in the main food prep area. Corrected on-site. Observed food residue build-up and slime in the floor drains behind the service bar area. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed food residue and debris in the interior of the upright refrigerated unit in the main food prep area.

Rutters #64, 1150 Harrisburg Pike Carlisle, May 12. Pass. Observed ingredient storage containers, in the front of house area, are not labeled with the common name of the food. Observed, across from the dish machine, a large amount grease build-up on the exterior of 3 cup holders and floor where the oil dispenser is stored, in need of cleaning. Observed multiple clear plastic storage container with a large amount of lime scale build up and are no longer easily cleanable in need of replacement. Observed an accumulation of static dust on ventilation and flood lights above the food prep areas of the kitchen. Observed the interior of the single use cup holders in customer area and kitchen with accumulation of dust, dirt, and food residue on no food contact surfaces. Observed organic build up, in the drain and on the floor, under the dish machine in need of cleaning.
