Village Square Family Diner, The, 5201 Spring Rd. Shermans Dale, April 30. Fail. Observed multiple open cups/containers/coffee mugs (employee’s beverages) located on the cook line not covered and need to be removed at the time of inspection. Corrected on site. Observed the following on food contact surfaces to have old food debris and/or build up: – Knife was stored between oven and bain maire – underside of cutting board on the bain marie – Meat slicer had old food debris on the blade and catch plate – produce slicer had dried food debris in the bowl. – microwave had old food debris and arching damaged needing replaced -multiple spatulas stored on top of cardboard which was extremely dirty and greasy -Can opener and holder. Food Employee did not follow proper handwashing procedure. Soap and/or warm water not used. Corrected on site. The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Food employees observed on cooking line area, not wearing proper beard covers. Observed floors throughout the facility with large amount of grease and dirt build up in need of cleaning. Observed food ingredient storage containers, in the pepsi cooler, bottom section of bain marie and walk in cooler area, is not labeled with the common name of the food. Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between. Corrected on site. Observed the interior of the dish machine to have build-up on upper spin arms, walls and ceiling of the unit. Observed Foods in the bain marie and upright Pepsi cooler area stored open with no covering. Raw beef stored above ready to eat foods in the walk-in cooler. Chili, which was cooled, was only reheated to 75 °F for hot holding and not 165°F for 15 seconds as required. Corrected on site. Observed the following equipment in the cooking area, with encrusted grease and/or soil accumulation including but not limited to areas under, between and/or inside each piece of equipment: – 4 burner oven combo – fryer – two flat top grills – 2 burner stove tops – pepsi cooler – bain marie. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the Pepsi cooler and walk in, is not being date marked. Observed multiple floor fans throughout the facility, Non-food contact surfaces, not cleaned at a frequency to preclude accumulation of dirt and static dust. *Manual / Mechanical warewashing equipment observed with build-up of filth and food residue on interior walls, ceiling and spin arm and not cleaned before use, and frequently throughout the day. Observed clean food storage containers, outside the dry storage area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Corrected on site. Fire Suppression lines above the grill are laden with grease and static dust. Three knives, and food debris observed in the handwash sink, indicating uses other than handwashing. Corrected on site. Lights are not shielded or shatter proof over the dry storage area and front of house service area. Mops are not being hung to air dry.
