The Doghouse, 6791 Linglestown Rd. Harrisburg, April 24. Fail. Food employee observed in kitchen area, wearing bracelet. Observed food ingredient storage containers and bottles, through-out the facility, is not labeled with the common name of the food. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Food Facility Operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that the Person in Charge is present at the food facility during all hours of operation. It was observed that there was no Person in Charge present at the facility at the time of the inspection. A white foam cup was observed in the food preparation area. It is recommended to designate a separate area for food consumption. Observed souffle cup, no handle, stored inside of different spices. Observed wet wiping cloths in kitchen area, not being stored in sanitizer solution. A white plastic container was observed to be cracked, chipped, broken, and discolored, and should be discarded. Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats, or beard covers. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Corrected by diverting all ware-washing to the three-bay manual ware-washing sink for sanitizing. Observed single-service, single-use articles stored in kitchen area directly on the floor, and not 6 inches above the floor. Observed handwash sink in the bar area was blocked by a clear plastic container, and the one in the kitchen was obstructed by two chemical bottles, making both sinks not accessible at all times for employee use. -A black container was observed holding various kitchen utensils (such as a strainer, spoons, spatulas, etc.), some of which had food residues. Additionally, food debris was found at the bottom of the container, with no signs of cleaning, either visually or to the touch. -The soda gun in the bar area was observed to have a black, mold-like residue inside the nozzles. The equipment was not clean to sight or touch. -A damp wiping cloth was observed draped over a trash can designated for waste disposal, which does not align with proper hygiene and sanitation practices. -The ice scoop was observed stored on top of the ice container in the bar area, which is not a sanitary surface and may lead to contamination of the scoop. -The ice scoop was observed stored on top of the ice container in the bar area, which is not a sanitary surface and may lead to contamination of the scoop. Additionally, in another ice container, the scoop was stored inside with the handle in direct contact with the ice, posing a contamination risk. -A container used for canine feeding was observed stored together with food utensils. Corrected on sight. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. -Plastic debris and accumulated dirt were observed on the floor beneath the refrigeration units in the food preparation line. -An accumulation of dirt and dust was observed on the fan guards in the walk-in cooler. -Accumulation of grease and dust on the range hood, which is dripping on the cooking area below and contaminating food being prepared. Paper towel dispenser empty at the handwash sink in the kitchen area. Unwrapped and unprotected single use straws stored in the customer area. Plumbing system not maintained in good repair – Both faucets at the three-compartment sink and the sprayer at the dishwashing machine were observed to be leaking. The plastic trim along the floor beneath the three-compartment sink is coming loose. The rear kitchen door was observed open without any type of screen door. This condition increases the risk of entry by rodents and insects.

Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats, or beard covers.

Bow Creek Inn, 9554 Jonestown Rd. Grantville, April 22. Pass. Observed puddle of grease/food debris on floor underneath fryers and needs to be cleaned. Food facility person in charge who held a Certified Food Manager certificate; however, the certificate has expired and is no longer valid. Plumbing system not maintained in good repair – observed water in handwash sink drain in kitchen area backed up and not draining properly and needs to be repaired.
