Kona Ice of York, mobile food facility Type Z, 2608 Wren Terrace, York, April 4. Pass. No violations.
Horn Pub, 691 Yorktown Rd. Lewisberry, Regular/Complaint, April 3. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between. Food Employee observed donning single use gloves without a prior hand wash. Flats of raw shell eggs are stored in box and in direct contact with cooked sausage. Observed two stacks of bus tubs stacked three high filled with chicken wings that have been fried on the preparation table which is not proper cooling method. Raw ground beef food was held at 50 degrees F, in ambient temperature on food preparation table, rather than 41 degrees F or below as required. Three baked potatoes observed on storage shelving in the kitchen area, potatoes once baked must be stored at 41 degrees F or below. Refrigerated ready to eat, time/temperature control for safety food (house made sauces, soup, sausage in gravy) prepared in the food facility and held for more than 24 hours, located in the walk in cooler, is not being date marked. Foods were discarded. Bacon dressing, Asian slaw, cut tomatoes refrigerated, ready to eat time temperature control for safety foods in the double door refrigerator, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. Discarded. Chest freezer door is broken exposing insulation. Three freezers were observed to have heavy accumulation of frozen condensate. Food boxes/bags are encrusted with frozen condensate. Can opener cutting blade, upper interior of microwave, utensils stored as clean, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Gun style soda dispenser nozzles in the bar area were observed to have moldlike substance and were not clean to sight and touch. The bain marie cutting board, a food contact surface is heavily stained and discolored. Numerous containers of foods are stored in containers with old lables and dates on them indicating the containers are not being cleaned between uses. Heat lamp over the pass through shelf observed to have dust, dirt and food splatter. Non-food contact surfaces, including but not limited to, shelving, food containers, condiment bottles, sides of equipment etc. not cleaned at a frequency to preclude accumulation of dirt and soil. Cleaned and sanitized utensils located in food preparation area, are stored with food contact surfaces/food or lip area exposed to hand contact when retrieved by food employees. The handwash sink in the bar area does not have single use towels, continuous towels, or air drying device. Floors, walls, ceilings and fixtures in the preparation room of the food facility are extremely dirty, dusty, and in need of cleaning.
Pick & Pay Mart LLC, 100-108 S. Penn St. York, April 3. Pass. A working container of cleaner/sanitizer was stored above or on the same shelf with food, equipment, and/or single service articles.
Range and Rye, 303 Golf Club Ave. Dillsburg, Regular/Complaint, April 1. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food Employee did not follow proper handwashing procedure. Food employee did not wash hands for adequate amount of time of at least 20 seconds. Food Employee did not follow proper handwashing procedure. Soap not used. Food Employee did not follow proper handwashing procedure. Single use towel or air drying device not used to dry hands. Food employee observed in kitchen prep area, wearing watch on arms. Food employees observed in kitchen prep area, not wearing proper hair restraints, such as nets, hats, or beard covers. A food employee was observed touching sliced lemons, limes, and oranges – ready to eat foods – with bare hands. Food utensils in kitchen prep area observed stored in a container of water which is not maintained at 135 degrees F. Scoop for ice being stored on dirty surface next to ice machine. Time in lieu of temperature being used as a control for potentially hazardous foods, but butter observed being held for more than 4 hours. Food facility’s chlorine test strips used to determine appropriate sanitizer concentration are expired. The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 0ppm, rather than 150-400ppm as stated on the manufacturers use directions. Observed deeply scored cutting boards not resurfaced or discarded as required. Meat slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Mold-like growth observed on the ceiling in the walk-in beer cooler. Drain pipes to floor drains throughout the facility do not have an adequate air gap of at least 1 inch, between the water supply and flood rim of the drain. Plumbing system not maintained in good repair – observed faucet next to the dish machine leaking at the handle. Hand wash sink next to Bain Marie at the cook’s line leaking from pipe under sink. Soap was not available at the handwash sink in the kitchen prep area. Ceiling tiles missing above dish machine, vegetable prep sink, and server kitchen area, and need replaced. A working container of floor cleaner was stored above warewashing sink where clean dishes are stored.
