The Pennsylvania Department of Agriculture, 866-366-3723, uses a risk-based inspection reporting process for restaurants and other food handlers.

Auntie Anne’s @ Harrisburg International Airport, 1 Terminal Dr. Middletown, July 6. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food employees observed in prep area, not wearing proper hair restraints, such as nets, hats, or beard covers. Hat was then corrected on sight, but no beard covers available. Observed food ingredient storage containers (bins), in the front and back areas, are not labeled with the common name of the food. Food dispensing utensils in the set of three rolling bins of spices observed stored in the food and not with handle above the top of the food and the container. Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the small True walk-in cooler in the front prep area, and held more than 24 hours, is not being marked with the date it was opened. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Observed three lids on the set of rolling floor bins located in prep area, are not in good repair or condition and are in need of replacement. Observed pink and black mold-like substance on the interior crash bar of the large ice machine in the back area and is not clean to sight or touch. Observed two hot mitts that were extremely dirty and coming in contact with food. Corrected on sight. Observed salt shaker that is extremely dirty and coming in contact with salt dispensed. Observed a large floor fan in the front prep area with accumulation of static dust and flour and in need of cleaning. Observed the exterior of the Amana microwave, in the front prep area, with accumulation of dried food debris and in need of cleaning. Observed a set of three large rolling bins in the front prep area and one large white rolling bin in the back area with accumulation of food debris on the exteriors and in need of cleaning. Observed single-service, single-use articles (a case of 22 ounce cups) stored in back dry storage area directly on the floor, and not 6 inches above the floor. Mops are not being hung to air dry.

G&T Funck Enterprises, 480 Bow Creek Rd. Grantville, Complaint, July 2. Pass. Time in lieu of temperature being used as a control for potentially hazardous foods, but pizza was observed being held for more than 4 hours. Pizza was discarded by person in charge. Corrected on site.

Kiddie Academy, 3901 N. Progress Ave. Harrisburg, July 2. Pass. No violations.

Kindercare, 3701 Vartan Way, Harrisburg, July 2. Pass. Mice feces found behind the auto-washer. Facility advised to call Pest Control Company for service.

Salad Works inside Giant Food Store, 2300 Linglestown Rd. Harrisburg, July 2. Pass. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed old food residue on the bottom shelf of the 2-door refrigerator. Fresh mice feces was found along side wall where 2-door refrigerator and the 2-door freezers reside.

Chipotle Mexican Grill, 210 Chocolate Ave. Hershey, Complaint, July 1. Fail. Observed the following on food contact surfaces: Shelving under food assembly area with accumulation of food debris around to go cups/containers and is need of more frequent cleaning, corrected on site; Numerous stainless-steel food containers stored dirty with old food residue on interior surfaces, corrected on site; Area around panini press with accumulation of food debris/dirt and is in need of more frequent cleaning; Scoop used for rice and rubber spatula stored dirty in container on prep table in the back prep room, corrected on site; Underside of soda dispensing machine in self-serve area with accumulation of dirt and pink slime residue around ice dispenser; Containers storing plastic utensils in self-serve area with accumulation of food debris and were not clean to sight and touch, corrected on site. Observed clean stainless-steel food containers on shelf in back prep area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Floors in the walk-in cooler are very dirty, and in need of cleaning.

Wasabi Bistro, 1311 E. Chocolate Ave. Hershey, July 1. Pass. Observed in-use knives and cleavers stored between table edges of bain-marie units in the cooking area, an area not easily cleanable & sanitized. Corrected on site. Observed wet wiping cloths in kitchen and sushi bar areas, not being stored in sanitizer solution. Corrected on site. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility (chicken, beef) and held for more than 24 hours, located in the True refrigerator in the kitchen area, is not being date marked. Corrected on site. Observed multiple clean dish racks stored on the floor in the ware washing area. Corrected on site.
