Since Russia invaded Ukraine in late February, millions of Ukrainians have been displaced. In fact, 5.7 million have left Ukraine and gone to other countries as refugees. Poland has taken in the most Ukrainian refugees — about 3.1 million.

The images Americans see of the refugees are heartbreaking. Many have few possessions and may not not know where their next meal s coming from.

Kim O’Donnel is a former food writer for LNP in Lancaster and the Washington Post, cookbook author and cook. She recently volunteered with World Central Kitchen to cook for Ukrainian refugees. She appears on Monday’s Smart Talk to describe what she saw and the experience.
