Who doesn’t love the taste of a real-deal low ‘n slow barbecue?  But who has the time to tend to the fire, keep the wood chips smoking, or the patience to get that smokehouse flavor?  The Emson Electric 5Qt Smoker may be the answer for anyone who’s always dreamt of being a weekend pit-master but just doesn’t have the time to spare!

By combining a pressure cooker and smoker in one appliance, the Emson Electric 5Qt Smoker increases the internal pressure by 15 psi, cooking food up to 70% faster while causing wood chips to release their fragrant, flavor-enhancing smoke.  According to the manufacturer, the internal chamber requires only three to five wood chips (that you supply yourself) to impart authentic barbecue smoke flavor onto food and all of the hot smoke is contained inside the vessel until the pressure is released.  An adjustable four-level rack holds up to 4 lbs. of food--from sausages and ribs to a whole chicken (albeit a very small chicken!).

What entices me the most, however, is that this little pressure smoker also cold smokes cheese or fish, it sears food prior to pressure smoking, and it can also be used as a traditional pressure cooker.  

Most reviewers agreed, too, that the pressure smoker does what it says.  Of course there are some reality checks, which you are wise to consider when investing a significant amount of cash into a small kitchen electric.  First, it isn’t comparable to a large outdoor smoker.  For a small family of three or four, or small jobs like cold smoking cheese and fish, the pressure smoker can handle sufficient quantities of food.  Next, while the smoke is contained inside the chamber during the cooking process, once the pressure is released the smoke does have to escape.  If you don’t have a high-powered oven vent (that vents to the outside) be prepared for all that smoke to be released into your kitchen.  Finally, though it says it can be used as a straight out pressure cooker, most reviewers agreed that once the pressure smoker is used to smoke food, the smoky residue on the interior of the pressure smoker imparts a smokiness to any foods prepared in it.

    I have an Emson Smoker and I love it. You are right about about some smoke escaping from the cooker, however it is very little; similar to logs burning in a fireplace. I use it sometimes for pressure cooking, but I prefer the cold smoking feature. I used maple chips to smoke seasalt last night and used the salt on fresh tomatoes. Yummm!!!!
