Many years ago I coined the phrase “Luke Approved!” to refer to an ingredient or recipe that is (or can be made) free of milk and milk proteins, eggs, and nuts.  You see, my nephew Luke has severe food allergies.  He doesn't suffer from an annoying intolerance but, instead, the full blown anaphylactic, life threatening allergies.  As time went on and my recipe collection grew, I put together a collection of recipes that I and my family have come to lovingly refer to as Luke Approved!TM  They were created to provide Seriously Good Food® for a then, young boy named Luke and his family—of which I am a part.

Foodie Find: Garden Bon Bons

When presented with a box Garden Bon Bons one may expect to find delicious nibbles of vegetable infused petit fours, or truffles with exotic vegetarian garnishes.  Despite their name, however, Garden Bon Bons are anything but edible!  Instead, these are seed balls made from clay and organic compost that are meant to be placed into a sunny spot of soil and watered. 

I have an entire pantry dedicated to seasoning:  spice bottles, spice blends, whole spice, ground spice, salts and peppercorns, dried herbs and of course oils, extracts, and other flavorful ingredients, which indeed I use.  But when people see so many pouches and bottles, jars and containers, they naturally want to know how long it all lasts?  The simple answer to that question is “as long as the spice has aroma and flavor.”  The not-so-simple reality is that no one has ever taken the time to explain – with a bit of useful detail – what that actually means!  Until now…

Food Wednesdays: Ingredient Substitutions

When it comes to meal time who doesn’t feel rushed in the kitchen?  The only thing worse than feeling the pressure to get a meal on the table is going to the fridge or pantry only to find a key ingredient missing.  Substituting ingredients isn’t as daunting a prospect as it may seem:  replace the ingredient’s primary taste (salt, sweet, sour, bitter or savory) with something similar. 

My top ten kitchen essentials list, aside from the obvious, like pots and pans and a standard electric appliance or two, and the not so obvious, like a fire extinguisher and a first aid kit, is comprised of the things I could not live without in my kitchen – both my professional kitchen and my home kitchen.  This is the list that lets me work in any kitchen for any purpose, and still perform like a star.  To make my list, each item has to let me function quickly and efficiently, and aid in the preparation and service of delicious food, time and time again.

Wine Tip Tuesday: Wines for Passover

I have to admit when it comes to choosing wine, I often let others more knowledgeable than I do the choosing.  When it comes to choosing the right wine for Passover, I demand an expert's opinion.  For this upcoming Passover Holiday, I'm counting on two of my favorite experts to help me find not only the right wine, but providing a little historical and technical context to put it all into.

We all have fallen prey to buying (or receiving as a gift) a countertop wine bottle rack.  They look gorgeous, sexy and sleek.  After you open your first bottle of wine that has been stored in that gorgeous rack, you realize that all the rules of wine storage are broken by keeping this contraption on your bar, under the heat of your cabinet lighting, and the rack gets relegated to the basement, or storage.  Well, it’s time to dig those old racks out and start using them again, but this time as water bottle dispensers.
